Smoky grilled chicken glazed with BBQ sauce, paired with buttered, charred corn on the cob — an easy summer meal.

# What You'll Need:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1/2 teaspoon salt
07 - 1/2 teaspoon ground black pepper
08 - 1 cup barbecue sauce, gluten-free if needed

→ Corn

09 - 4 ears corn on the cob, husked
10 - 2 tablespoons melted butter
11 - Salt, to taste
12 - Ground black pepper, to taste

→ Garnish

13 - 2 tablespoons chopped fresh parsley (optional)
14 - Lime wedges (optional)

# How-To Steps:

01 - Preheat grill to medium-high heat, approximately 400°F.
02 - Pat chicken breasts dry. In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Evenly rub the seasoning mixture on both sides of each chicken breast.
03 - Brush each corn cob with melted butter and season all over with salt and black pepper.
04 - Place seasoned chicken breasts on preheated grill. Cook for 6 to 7 minutes per side. During the last 3 to 4 minutes on each side, baste with barbecue sauce. Continue grilling until internal temperature reaches 165°F.
05 - While chicken cooks, grill corn, turning occasionally, until lightly charred and tender, about 10 to 12 minutes.
06 - Transfer chicken and corn from grill. Allow chicken to rest for 5 minutes before slicing.
07 - Arrange sliced grilled chicken and corn on plates. Garnish with chopped parsley and lime wedges if desired.

# Expert Tips:

01 -
  • The spice rub takes thirty seconds and makes store bought barbecue sauce taste homemade.
  • Everything cooks on one grill at the same time so cleanup is practically nothing.
02 -
  • If you sauce the chicken too early the sugar in the barbecue sauce will char black before the meat is cooked through.
  • Letting the chicken rest for a full 5 minutes after grilling made the difference between dry slices and juicy ones.
03 -
  • Pound the chicken breasts to even thickness before seasoning so they cook at the same rate and you avoid dry thin edges.
  • Brush the grill grates with oil right before cooking and the chicken will release cleanly every time.
